For day-to-day kitchen management, the simpler and more reliable rule is to keep bare hands out of ice that will be consumed or touch food.

Use the Right Tool---Not a Glass or a Hand

Acceptable operational options

For consumable ice, establish one or more of these methods:

  • Dedicated scoop: Employees handle the scoop by its handle only.

  • Dispensing equipment: A dispenser can reduce direct handling of the ice.
  • Single-use gloves: These may be an allowed alternative under some adopted rules, but gloves are not a substitute for hand hygiene, utensil storage, or task controls.

If gloves are used, define when employees must change them based on the facility's task-change and cross-contamination procedure. Do not treat gloves as permission to move from unrelated work into ice handling without following the operation's hygiene controls.

Prohibited workarounds

Do not allow employees to:

  • Reach into the bin with bare hands.
  • Use a drinking glass to scoop ice.
  • Use a customer cup, food container, bottle, or other improvised item as a scoop.
  • Leave glassware in or near the bin for later use.
  • Use one bin for incompatible purposes without a clear, approved procedure.

Using a drinking glass as a scoop creates two practical hazards: cross-contamination and the possibility of glass breakage in the ice. It is not an acceptable shortcut.

Store the Scoop So It Stays Clean

Providing a scoop is only half the procedure. The other half is where it goes between uses.

A workable routine is:

Scoop → dispense ice → return the scoop to a clean, external holder

An external, cleanable holder beside the bin helps employees keep the scoop accessible without burying it in the ice. A scoop with a knuckle guard can further help keep hands away from the ice during use.

Keep the bin for ice only. Do not store glassware, bottles, food containers, towels, tools, or other items in it. Improperly stored or dirty ice tools can become an inspection concern, even when employees are not directly touching the ice.

The exact holder design and storage configuration may be addressed by local rules. Ask the inspecting authority if your setup is unclear, especially when the holder is attached to equipment or located near a hand sink, bar well, or ice machine.

Build the Rule Into Daily Operations

Ice handling is not a one-time training topic. The procedure needs visible controls that staff can follow every shift.

Put these points in the ice-handling SOP

  • Identify which bins contain consumable ice and which, if any, are reserved for another use.
  • Prohibit bare-hand contact with consumable ice.
  • Assign a dedicated scoop, tongs, or dispensing method to each bin.
  • Prohibit drinking glasses and other improvised containers as scoops.
  • Specify where the scoop is stored between uses.
  • Require handwashing before ice handling and require employees to handle the scoop by the handle.
  • Set task-change expectations for gloves where gloves are part of the procedure.
  • Define cleaning and sanitation responsibilities for bins, scoop holders, scoops, and ice-machine components.
  • Follow the equipment manufacturer's instructions and any local health-department requirements for cleaning, filter changes, and maintenance.

Sanitation matters as much as dispensing. Mold in an ice bin is identified in inspection guidance as a kitchen-sanitation violation. Maintain a cleaning and maintenance record rather than relying on memory, and use the manufacturer's instructions instead of assuming a universal cleaning frequency.

Inspection-Ready Ice Handling Checklist

Before service, managers should be able to confirm:
